Super Southwestern Chicken!

You've GOT to try this new and SUPER-easy chicken recipe!  It is delish.  I'm all about some crock-pot recipes that you only have to throw everything in the pot in the morning and come home to a yummy meal.  My sister gave me this cookbook for Christmas, and I'm loving it.  It's got excellent recipes (just my style...) plus it has devotions on every other page.

Southwestern Chicken
  • Ingredients:
    • 4 Boneless, skinless chicken breasts (*we only used 2)
    • 1 can of chunky tomatoes
    • 1 can of black beans (rinsed and drained)
    • 1 can of mexi-corn (drained)
    • 1 tablespoon of chili powder
  • Directions:
    • Mix the cans + chili powder together
    • Pour the mix over the chicken in the crock-pot
    • Cook 4 hours on High or 8 hours on Low
We only made ours with 2 chicken breasts because we are weird about eating leftover meat, but it actually turned out great because the extra cooked veggies were excellent served over the rice I cooked to go with it.

Super quick, super easy, super GOOD!
